Banana Blueberry Muffins with Lavender

Lavender-infused banana blueberry muffins, perfect with a side of warm butter.
Ingredients:
  • cooking spray
  • 1 cup all-purpose flour
  • 0.75 cup whole-wheat flour
  • 1 cup white sugar
  • 1.5 teaspoons lavender flowers
  • 0.25 teaspoon salt
  • 2 ripe bananas, mashed
  • 0.5 cup 1% milk
  • 0.25 cup canola oil
  • 1 egg, beaten
  • 1 cup fresh blueberries
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and give your 12-cup muffin tin a quick spritz with cooking spray.
  • In a bowl, mix all-purpose flour, whole-wheat flour, sugar, baking powder, lavender, and salt. In a separate bowl, combine bananas, milk, canola oil, and egg. Add the banana mixture to the flour mixture and stir until just combined. Gently fold in blueberries before spooning the batter into the muffin tin.
  • Bake in the oven until golden and a toothpick inserted in the center comes out clean, approximately 20 minutes. Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack.
