Transform banana bread into portable and irresistible lunchbox treats.
Ingredients:
  • 300.00 gm self-raising flour
  • 0.63 gm bicarbonate of soda
  • 90.00 gm brown sugar
  • 3 tsp cinnamon sugar (see notes)
  • 2 eggs, lightly beaten
  • 75.08 gm extra virgin olive oil
  • 1 tsp vanilla bean paste
  • 82.50 ml plain natural yoghurt
  • 260.00 gm mashed banana (see notes)
  • Extra 1 small banana, sliced
Instructions:
  • Preheat your oven to 190C/170C fan-forced and grease a 12-hole muffin pan (1/3-cup-capacity).
  • In a large bowl, sift together flour and bicarbonate of soda. Add brown sugar and 2 teaspoons of cinnamon sugar. Create a well in the center.
  • In a bowl, combine whisked egg, oil, and vanilla. Gently pour into the flour mixture without stirring. Add yoghurt and mashed banana, then lightly mix until just combined. Portion the batter evenly into the prepared pan holes. Place a banana slice on top of each portion and finish by sprinkling with the remaining cinnamon sugar.
  • Bake for 15-20 minutes until golden and firm to the touch. Let it rest in the pan for 5 minutes, then cool on a wire rack. Serve.
