Indulgent banana bread - perfect with tea. Fun baking activity for kids; delicious for all.
Ingredients:
125 g unsalted butter plus extra for greasing (at room temperature)
2 large eggs
4 ripe bananas
2tablespoons runny honey
2tablespoons unsweetened apple juice
250 g self-raising flour plus extra for dusting
1big pinch of ground cinnamon
50 g pecans optional
Instructions:
Preheat the oven to 180ºC/350ºF/gas 4 and lightly grease a 1-litre loaf tin with butter using a folded-up piece of kitchen paper. In a large bowl, beat soft butter until creamy, then add and beat in the eggs. Mash 3 bananas and mix into the bowl with a fork. Stir in honey, apple juice, flour, and cinnamon until just combined. Fold in chopped pecans and spoon the mixture into the loaf tin. Top with sliced banana. Bake for 40-50 minutes until golden and cooked through. Check doneness with a skewer. Cool, then serve sliced and spread. Enjoy with butter, honey, jam, or chocolate spread.
