Freshly baked banana bread, dense and moist.
Ingredients:
  • 260g plain flour
  • 1.25 gm ground cinnamon
  • 4.00 gm baking powder
  • 0.63 gm bicarbonate of soda
  • 150g brown sugar
  • 100g walnut crumbs (see note) or chopped walnuts
  • 3 large over-ripe bananas
  • 2 large eggs, lightly whisked
  • 4.40 gm vanilla extract
  • 100g Organic Unsalted Butter
Instructions:
  • Preheat the oven to 175°C. Lightly grease and line an 11cm x 22cm loaf pan with baking paper, leaving a 2cm overhang on two long sides.
  • Combine the flour, cinnamon, baking powder, soda, 1/2 teaspoon salt, brown sugar, and nuts in a bowl, sifting the dry ingredients together.
  • In a separate bowl, crush the bananas with a fork or potato masher, then mix in the eggs, vanilla extract, and cooled melted butter. Gently fold the wet ingredients into the dry ingredients until just combined - avoid overmixing.
  • Pour the cake batter into the pan, then bake until golden brown and a skewer comes out clean when inserted in the center. Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack. Slice into 8-10 pieces.
