Banana cheesecake meets banana cream pie in one irresistible dessert!
Ingredients:
  • 2 cups crushed chocolate sandwich cookies (such as Oreo®)
  • 1 tablespoon butter, melted
  • 3 (8 ounce) packages fat-free cream cheese, softened
  • 0.75 cup white sugar
  • 3 eggs
  • 0.5 cup mashed banana
  • 1 teaspoon vanilla extract
  • 2.5 cups cold milk
  • 2 (3.4 ounce) packages instant vanilla pudding mix
  • 1 cup fat-free frozen whipped topping, thawed
  • 1 sliced banana, or more to taste
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect baking temperature.
  • Combine cookie crumbs and melted butter, then firmly press into the base of a 9-inch springform pan.
  • In a bowl, cream together cream cheese and sugar using an electric mixer until smooth. Add eggs one at a time, mixing well after each. Fold in mashed banana and vanilla extract. Pour the mixture into the crust in the springform pan.
  • Bake in the preheated oven for 50-60 minutes, or until the center is almost set. Allow to cool completely for at least 1 hour before removing from the pan.
  • Combine milk and pudding mix, whisk until fully incorporated, then gently fold in whipped topping.
  • Place the sliced bananas in an artistic pattern on the cooled cheesecake. Generously spread the pudding mixture on top, ensuring it covers the bananas evenly. Refrigerate for at least 3 hours before serving to allow all the flavors to meld together beautifully.
