Banana Cheesecake

Indulge in a heavenly slice of cheesecake, topped with whipped cream and a cherry - reminiscent of a classic banana split!
Ingredients:
  • 1 1/2 cups finely crushed chocolate wafer cookie crumbs (about 30 cookies)
  • 1/4 cup butter or margarine, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla
  • 4 eggs
  • 1 cup mashed very ripe bananas (2 medium)
  • 1 cup (1/2 pint) whipping cream
  • 3 tablespoons powdered sugar
  • 16 maraschino cherries, drained, patted dry
Instructions:
  • 1. Preheat the oven to 325°F. Wrap a 10-inch springform pan with heavy-duty foil to prevent leaks, then grease the inside with cooking spray. 2. Combine crust ingredients in a small bowl and press into the bottom and 1 1/2 inches up the side of the pan. 3. Bake for 10 to 12 minutes until set. Reduce oven temperature to 300°F and cool crust for 10 minutes.
  • In a big bowl, use an electric mixer to blend cream cheese, granulated sugar, and vanilla until smooth. Add eggs one by one until blended, then mix in bananas until smooth. Pour the filling into the crust.
  • Bake the cheesecake in a preheated 300°F oven for 1 hour to 1 hour 10 minutes, or until the edges are set at least 2 inches from the edge of the pan but the center still jiggles slightly. Turn off the oven, crack the door open at least 4 inches, and let the cheesecake sit in the oven for 30 minutes. Run a small metal spatula around the edge of the pan to loosen the cheesecake, then let it cool in the pan on a rack for 30 minutes. Refrigerate the cheesecake for at least 6 hours or overnight before serving.
  • To serve, gently loosen the sides of the cheesecake with a small metal spatula, carefully remove the foil and the pan. In a chilled medium bowl, whip the whipping cream and powdered sugar with an electric mixer on high speed until soft peaks form. Spread the whipped cream over the cheesecake and top with cherries for garnish. If there are any leftovers, cover and refrigerate.
