Banana Coconut Pudding or Pie Filling

Indulgent banana coconut pudding with a decadent butterscotch flavor. Sweetened with coconut sugar, perfect for pie fillings too.
Ingredients:
  • 6 cups unsweetened vanilla-flavored almond milk
  • 6 large egg yolks
  • 0.66666668653488 cup coconut sugar
  • 0.5 cup cornstarch
  • 1 teaspoon sea salt
  • 1 cup toasted unsweetened shredded coconut
  • 0.25 cup butter
  • 1 tablespoon bourbon vanilla extract
  • 3 bananas, sliced
Instructions:
  • In a large saucepan, combine almond milk, egg yolks, coconut sugar, cornstarch, and salt. Stir continuously and bring the mixture to a boil. Cook and stir until it thickens, for about 1 to 2 minutes. Then, mix in shredded coconut, butter, and vanilla extract. Remove from heat and let the pudding cool to room temperature.
  • Distribute sliced bananas among 8 serving bowls and drizzle pudding on top.
