Creamy vanilla pudding layered with fresh bananas in a pie shell, topped with toasted meringue.
Ingredients:
  • 0.66666668653488 cup white sugar
  • 0.25 cup cornstarch
  • 4 large egg yolks, beaten
  • 2 tablespoons butter
  • 1 tablespoon vanilla extract
  • 1 (9 inch) deep dish pie crust, baked and cooled
  • 1 large banana, sliced
  • 4 large egg whites
  • 0.25 teaspoon cream of tartar
  • 0.5 cup white sugar
  • 0.25 teaspoon vanilla extract
Instructions:
  • Preheat oven to 400°F (200°C) for a perfectly cooked dish.
  • In a large saucepan or double boiler, mix sugar, cornstarch, and salt for the custard until well combined. Add milk and egg yolks, whisk until fully mixed. Cook over medium heat, stirring constantly until thickened. Remove from heat and stir in butter and vanilla.
  • Pour half of the luxurious custard into the golden baked pie shell. Layer it with slices of ripe banana, then generously spread the velvety remaining custard over the luscious banana filling.
  • In a large glass or metal mixing bowl, whisk egg whites and cream of tartar until foamy. Gradually add sugar while continuing to whisk until stiff peaks form. Gently fold in vanilla extract. Spread the meringue over the pie to cover it completely.
  • Place in the oven that has been preheated until golden brown, about 10-15 minutes.
