Have delicious banana bread on hand for a quick and satisfying snack straight from the freezer.
Ingredients:
  • 125g butter, softened
  • 107.50 gm caster sugar
  • 54.00 gm maple syrup
  • 3 large bananas, mashed (see note)
  • 187.50 ml plain flour
  • 112.50 gm self-raising flour
  • 1.25 gm bicarbonate of soda
  • Reduced-fat spread, to serve
Instructions:
  • Preheat your oven to 180C/160C fan-forced and generously grease two 5cm-deep, 6.5cm x 12.5cm (base) loaf pans.
  • With an electric mixer, whip together butter, sugar, and maple syrup until creamy. Incorporate the eggs one at a time, mixing until just combined after each addition.
  • Pour the butter mixture into a large bowl, then mix in the banana using a wooden spoon until just combined. Sift the flours and bicarbonate of soda over the butter mixture and stir gently until just combined.
  • Transfer the mixture into the prepared pans, ensuring the top is smoothed out. Bake for 35 minutes or until a skewer inserted in the center comes out clean. Allow the loaves to cool in the pans for 5 minutes, then transfer them onto a wire rack to cool. Enjoy warm or toasted with your favorite spread.
