Indulgent banana muffins with a cinnamon twist, filled with sweet cream cheese and honey frosting. Ready in just 20 minutes. Freeze for future cravings. Gluten-free options available.
Ingredients:
  • 450.00 gm self-raising flour
  • 321.88 gm milk
  • 1 egg, lightly beaten
  • 90g slightly salted butter, melted
  • 90.00 gm firmly-packed brown sugar
  • 2.50 gm ground cinnamon
  • 2 small bananas, peeled, mashed (see note)
  • Cream cheese, to serve
  • Honey, to serve
Instructions:
  • Preheat the oven to 180°C and lightly grease a non-stick muffin pan with 12 holes, each with a 1/3-cup capacity.
  • In a large bowl, combine flour, brown sugar, and cinnamon. Make a well in the center. In a separate jug, mix milk, egg, and butter. Add mashed banana to the milk mixture. Pour the milk mixture into the well. Gently stir with a large metal spoon just until combined; avoid over-mixing.
  • Fill muffin holes with mixture until three-quarters full, then bake for 20 minutes or until a skewer comes out clean when inserted in the center. Cool in the pan for 1 minute, then transfer to a wire rack to cool.
  • Slice muffins in half, generously spread cream cheese and honey inside, then top with the other half of the muffin. Serve and enjoy!
