Lighter, healthier twist on a classic dish.
Ingredients:
  • 75g (1/2 cup) oat bran
  • 150ml milk
  • 225g (1 1/2 cups) plain flour
  • 10.00 gm baking powder
  • 155g (3/4 cup, firmly packed) brown sugar
  • 55g (1/3 cup) sunflower seed kernels
  • 100g butter, melted, cooled
  • 260.00 gm mashed very ripe banana
  • 2 eggs, lightly whisked
Instructions:
  • Preheat your oven to 180°C and prepare 12 medium muffin pans by lining them with paper cases of 125ml/1/2-cup capacity.
  • Soak the oat bran in milk in a medium bowl.
  • Sift together flour and baking powder in a large bowl. Mix in sugar and sunflower seed kernels until well combined.
  • Combine the melted butter, banana, and eggs with the oat bran mixture using a fork until fully mixed. Then, gently fold the mixture into the flour using a large metal spoon until just combined.
  • Distribute the mixture evenly among the prepared muffin pans. Bake in a preheated oven for 25 minutes until golden and a toothpick inserted in the center comes out clean. Transfer muffins from the pan to a wire rack to cool. Enjoy warm or at room temperature.
