Moist banana muffins with a rich flavor from buttermilk, apple, and cinnamon.
Ingredients:
  • 300.00 gm self-raising flour
  • 5.00 gm ground cinnamon
  • 0.63 gm bicarbonate of soda
  • 107.50 gm caster sugar
  • 260.00 gm mashed banana
  • 1 egg, beaten
  • 195.00 gm buttermilk
  • 140g can diced apple
Instructions:
  • Preheat the oven to 200°C. Grease a 12-cup muffin pan or line with paper cases. In a large bowl, sift together flour, cinnamon, baking powder, and bicarbonate of soda. Stir in the sugar until evenly combined.
  • In a jug, combine banana, egg, and buttermilk, whisking with a fork until blended.
  • Combine the banana mixture and apple with the dry ingredients, gently fold until just combined.
  • Gently fill muffin pan with mixture. Bake for 12-15 minutes, then let rest for 5 minutes before transferring onto a wire rack. Serve while warm.
