Indulge in moist and wholesome whole wheat banana bread with a light and creamy Greek yogurt twist.
Ingredients:
  • 3/4 cup Gold Medal™ all-purpose flour
  • 3/4 cup Gold Medal™ whole wheat flour
  • 1/2 cup sugar
  • 3/4 cup mashed very ripe bananas (about 2 medium)
  • 1 container (6 oz) Greek Fat Free plain yogurt
  • 1/3 cup vegetable oil
  • 1 teaspoon baking soda
  • 2 eggs
  • 1/2 cup coarsely chopped nuts
Instructions:
  • Preheat your oven to 350°F and generously grease only the bottom of an 8x4- or 9x5-inch loaf pan with shortening or cooking spray.
  • In a large bowl, use an electric mixer to beat all ingredients except nuts on low speed for 30 seconds, then switch to medium speed for 45 seconds while scraping the bowl frequently. Fold in the nuts and then pour the batter into the pan.
  • Bake for 45-55 minutes until a toothpick inserted in the center comes out clean. Allow it to cool for 10 minutes, then gently loosen the sides of the loaf from the pan and transfer to a cooling rack. Let it cool completely for about 1 hour before serving.
