Try this fun twist on traditional banana bread - bake it in a jar for a unique and giftable treat!
Ingredients:
  • 0.66666668653488 cup shortening
  • 2.6666667461395 cups white sugar
  • 4 eggs
  • 2 cups mashed bananas
  • 0.66666668653488 cup water
  • 3.3333332538605 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1.5 teaspoons salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 0.66666668653488 cup chopped pecans
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C) and generously grease the insides of 8 (1 pint) straight-sided, wide-mouth canning jars.
  • In a big bowl, mix shortening and sugar until creamy and fluffy. Blend in eggs, bananas, and water. Combine flour, baking powder, baking soda, salt, cinnamon, and cloves in another bowl. Fold into the banana mixture. Gently mix in nuts.
  • Pour the mixture into well-greased wide-mouth pint jars, filling them halfway with batter. Do not cover the jars with lids while baking. Remember to keep the rims clean by wiping off any batter that spills on them.
  • While the dish bakes at 325°F (165°C) for 45 minutes, sterilize the lids and rings by boiling them in water.
  • Once the cake is baked, carefully remove each jar from the oven, wipe the rims clean, and securely place the lid and ring on each jar. Allow the cakes to cool on the counter for the lids to seal. Listen for the satisfying "ping" sound of the jars sealing. If you are unsure, wait for them to cool completely and check by pressing on the lid - if it's firm and doesn't move, it's sealed.
  • Enjoy your tasty creation right away or store it in the refrigerator, sealed, for up to a week.
