Indulge in Curtis Stone's irresistible banana coconut walnut bread.
Ingredients:
  • 4 small-medium ripe bananas
  • 62.50 gm butter, melted
  • 90.00 gm brown sugar
  • 75.00 gm icing sugar
  • 8.80 gm vanilla extract
  • 375.00 ml plain flour
  • 2.50 gm baking soda
  • 1.25 gm cinnamon
  • 37.95 gm walnuts, chopped
  • 16.25 gm shredded coconut
  • 110g cream cheese, softened
  • 55g butter, softened
  • 150.00 gm icing sugar
Instructions:
  • Preheat the oven to 175°C.
  • Whisk together flour, salt, cinnamon, and baking soda in a medium mixing bowl.
  • In a large mixing bowl, gently mash ripe bananas, leaving some delicious small chunks intact. Add sugars and mix until fully combined. Stir in melted butter, then incorporate the egg and 1 teaspoon of fragrant vanilla extract.
  • Fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  • Gently mix in the coconut and walnuts, then transfer the batter into a greased or lined loaf pan.
  • Bake until the top is a rich golden brown and a toothpick inserted comes out clean, about 50-60 minutes. Allow to cool before adding frosting.
  • In a large mixing bowl, combine butter and cream cheese using a hand mixer until smooth. Stir in the remaining vanilla.
  • Gradually incorporate the sugar in two additions until smooth and creamy without any lumps.
  • Take the loaf out of the pan, discard any paper if used, frost the top, and slice into portions.
