Sweet plum-infused banana bread - a delicious twist on a classic favorite!
Ingredients:
  • 2.75 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 cup white sugar
  • 0.5 cup margarine, softened
  • 1.5 cups mashed ripe bananas
  • 1 cup plums, pitted and chopped
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease a 9x13-inch baking dish.
  • Sift together flour, baking powder, and baking soda into a bowl.
  • Cream together sugar and margarine until creamy. Add eggs and beat well. Gradually mix in flour mixture in three parts, alternating with mashed bananas. Beat briefly after each addition until smooth and combined. Gently fold in plums and transfer batter to the prepared baking dish.
  • Bake until beautifully golden for approximately 1 hour in the preheated oven.
