Whip up delicious banana poppy seed pancakes made with honey and nutritious whole wheat flour for a special morning treat.
Ingredients:
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 4 teaspoons baking powder
  • 2 teaspoons poppy seeds
  • 2 eggs
  • 2 cups milk
  • 2 ripe bananas, mashed
  • 0.25 cup coconut oil, melted
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 0.5 cup fresh blueberries
Instructions:
  • Combine whole wheat flour, all-purpose flour, baking powder, poppy seeds, and salt in a bowl, whisk until well mixed.
  • In a large bowl, whisk together eggs, milk, bananas, coconut oil, honey, and vanilla extract until smooth. Add the flour mixture and gently stir until just combined.
  • Heat up a lightly oiled griddle over medium-low heat. Pour 1/4 cup of batter onto the griddle and add a handful of blueberries on top of each pancake. Cook for about 3 minutes until bubbles form and edges are set. Flip and cook for an additional 2 minutes until the other side is nicely browned.
