Indulge in comforting warm banana pudding to lift your spirits this winter.
Ingredients:
  • Melted butter, to grease
  • 2 over-ripe bananas, mashed
  • 185ml (3/4 cup) boiling water
  • 0.63 gm bicarbonate of soda
  • 150g (1 cup) self-raising flour
  • 115g (1/2 cup) raw caster sugar
  • 55g (1/2 cup) almond meal
  • 60g butter, melted
  • 2 eggs, lightly whisked
  • 55g (1/3 cup) whole unsalted roasted peanuts, coarsely chopped
  • 375ml (1 1/2 cups) cold water
  • 175g (3/4 cup) raw caster sugar
  • 300ml thickened cream
  • 80ml (1/3 cup) passionfruit pulp
  • 40.00 gm raw caster sugar
Instructions:
  • Prepare a baking tray by lining it with parchment paper and evenly spreading the peanuts on it. In a saucepan over low heat, mix water and sugar together, stirring constantly for 3 minutes until the sugar dissolves. Increase the heat to medium-high and boil the mixture for 15 minutes until it turns golden in color, occasionally brushing the sides of the pan with a wet pastry brush. Once done, remove from heat and let it sit for 5 minutes until the bubbles settle. Gently pour the toffee over the peanuts on the tray. Allow it to set for 20 minutes before serving.
  • Preheat the oven to 180°C. Grease four 250ml (1-cup) capacity ovenproof ramekins with melted butter. Place them on a baking tray. In a large heatproof bowl, combine the bananas with boiling water and bicarbonate of soda. Let it sit for 5 minutes.
  • Combine flour, sugar, almond meal, melted butter, and egg with the banana mixture until fully incorporated. Divide the batter among ramekins. Bake in the oven for 30 minutes or until a skewer inserted into the centers comes out clean. Allow to cool for 5 minutes before serving.
  • In a saucepan over medium heat, mix together cream, passionfruit pulp, and sugar. Simmer and stir occasionally for 5 minutes until the sauce slightly thickens.
  • Break the peanut brittle into pieces and then turn the banana puddings out onto plates. Drizzle with passionfruit cream and serve with the peanut brittle.
