Decadent banana pudding with layers soaking in maple syrup.
Ingredients:
  • 1 egg
  • Melted butter, to grease
  • 55g (1/2 cup) walnut halves, roughly chopped
  • 32.00 gm brown sugar
  • 100g (2/3 cup) self-raising flour
  • 135g (1/2 cup) mashed ripe banana
  • 50g butter, melted, cooled
  • 27.00 gm maple-flavoured syrup
  • 32.00 gm brown sugar, extra
  • 2.50 gm cornflour
  • 250ml (1 cup) boiling water
  • 60ml (1/4 cup) maple-flavoured syrup
Instructions:
  • Preheat oven to 180°C. Grease four 250ml (1-cup) ramekins with melted butter and place on a baking tray. Spread walnuts on a tray and bake in the oven for 5 minutes until lightly browned. Cool slightly before using.
  • In a medium bowl, combine sugar and sifted flour. Mix in banana, butter, egg, and maple syrup with a wooden spoon until smooth.
  • Stir in walnuts to the banana mixture and mix well. Evenly distribute the mixture into the prepared ramekins and smooth the surface using the back of a spoon.
  • In a bowl, mix together extra sugar and cornflour. Sprinkle this mixture evenly over the pudding batter. In a jug, combine water and maple syrup, then pour over the top of the pudding.
  • Bake in a preheated oven for 25 minutes or until a skewer inserted halfway into the center of the puddings comes out clean. Allow to cool for 5 minutes before serving.
