Turn mushy bananas into a delicious family-friendly dessert!
Ingredients:
  • 4 bananas, peeled, halved lengthways
  • 55g (1/4 cup, firmly packed) brown sugar
  • 3 scoops vanilla ice cream
  • Whipped cream, to serve
  • Chocolate sauce, to drizzle
  • 4 maraschino cherries
  • Chopped roasted peanuts, to sprinkle
Instructions:
  • Preheat the oven to 200C/180C fan forced. Grease a shallow baking tray with butter and arrange the bananas, cut side up, in the tray.
  • Mix sugar and butter, then generously spread over the banana. Roast for 15 minutes until the banana is sweetly caramelized and soft. Let it rest for 5 minutes. Serve with a scoop of ice cream and dollop of cream. Drizzle with chocolate sauce and sprinkle with cherries and peanuts.
