Indulgent Banana-Bread Bread Pudding made with real banana bread. Enjoy hot out of the oven.
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 cup unsalted butter, softened
  • 3/4 cup packed brown sugar
  • 2 cups mashed very ripe bananas (4 medium)
  • 2 packages (3 oz each) cream cheese, softened
  • 1/2 cup powdered sugar
  • 2 1/4 cups half-and-half
  • 1 1/2 teaspoons vanilla
  • Dash salt
  • 3 eggs
  • Powdered sugar
Instructions:
  • Preheat the oven to 350°F and generously coat an 11x7-inch (2-quart) glass baking dish with cooking spray.
  • Combine flour, baking soda, cinnamon, and 1/4 teaspoon salt in a medium bowl. Set aside.
  • In a spacious bowl, use an electric mixer to blend together butter and brown sugar until smooth. Incorporate 2 eggs one at a time, ensuring to scrape down the sides of the bowl after each addition. Mix in bananas thoroughly. Gently add the flour mixture on low speed until just combined. Transfer the batter to a baking dish.
  • Bake for 35 to 45 minutes until a toothpick inserted in the center comes out clean. Allow to cool for about 15 minutes.
  • Dice the Banana Bread into 1-inch cubes and arrange them in a single layer on an ungreased cookie sheet. Bake the cubes in the oven for 15 to 20 minutes, flipping them occasionally, until they are slightly dried out.
  • Place the dried cubes in an ungreased 8-inch square (2-quart) glass baking dish or 6 individual ramekins. Set aside for later.
  • In a medium bowl, blend cream cheese and powdered sugar together until smooth using an electric mixer. Stir in half-and-half on low speed. Mix in vanilla, salt, and 3 eggs until nearly smooth. Pour the custard evenly over the bread cubes in the dish, making sure all cubes are fully soaked. If needed, press down on the cubes with a spoon to ensure they are covered in custard.
  • Bake for 35 to 50 minutes until the custard is set. Dust the top of the bread pudding with powdered sugar, then cut into squares and serve warm.
