Try this modern take on bread pudding - low fat, low GI, and effortlessly delicious!
Ingredients:
  • 40g reduced-fat spread
  • 9 slices oatbran and honey bread
  • 515.00 gm skim milk
  • 3 eggs
  • 57.20 gm yellow box honey (see note)
  • 2 small bananas, thinly sliced
  • Low-fat ice-cream or custard, to serve
Instructions:
  • Preheat the oven to 170°C. Generously spread reduced-fat spread on both sides of bread slices, then trim off the crusts and neatly cut each slice in half.
  • Combine milk, eggs, honey, and cinnamon in a jug and whisk until smooth.
  • Arrange slices of bread in a greased 5-cup, ovenproof dish, then cover with sliced bananas.
  • Pour the milk mixture over the dish and let it rest for 10 minutes. Bake until it puffs up and turns golden brown, about 45 to 50 minutes. Enjoy with a side of ice cream or custard.
