Versatile banana bread can be enjoyed with butter at breakfast or elevated for a delicious dessert option.
Ingredients:
  • 1 x basic bread recipe
  • 6 bananas
  • 8 tablespoons runny honey
  • 1 handful of almonds cracked or chopped
Instructions:
  • Begin by peeling bananas and blending them until smooth. The consistency will be quite liquid. Transfer to a measuring jug and add water until you reach 625ml or slightly over 1 pint. Replace water in basic bread recipe at Stage 1 with banana liquid for a flavorful, chewy bread. Mix in half of the honey with nuts at this step. Proceed with the basic recipe as usual. Once at Stage 5, divide dough into 10 balls and place them closely together in a flour-dusted baking tin for proving. Before baking, drizzle remaining honey over the top for a golden caramelized finish. Bake at 190ºC/375ºF/gas 5 for 20 minutes. Let it cool slightly and enjoy warm with butter and milk for breakfast. This bread is also great for bread and butter pudding or served warm with ice cream.
