Honey and banana bread

Banana bread drizzled with sweet honey syrup for a deliciously moist treat.
Ingredients:
  • Melted butter, for greasing
  • 125g butter, cubed, at room temperature
  • 185mls (3/4 cup) honey
  • 2 eggs, lightly whisked
  • 3 medium ripe bananas, mashed
  • 60mls (1/4 cup) buttermilk
  • 300g (2 cups) plain flour
  • 4.00 gm baking powder
  • 1.25 gm bicarbonate of soda
  • 2.50 gm ground cinnamon
  • Thick cream, to serve
  • 160mls (2/3 cup) honey
  • 80mls (1/3 cup) fresh lemon juice
  • 80g (1/2 cup) almond kernels, coarsely chopped
Instructions:
  • Preheat your oven to 170°C. Use the melted butter to lightly grease a medium loaf pan measuring 8.5 x 19cm at the base.
  • In a large mixing bowl, use electric beaters to whip together the butter and honey until creamy and well mixed. Incorporate the eggs one at a time, beating well after each addition until fully combined. Mix in the bananas and buttermilk until just combined.
  • Sift together plain flour, baking powder, bicarbonate of soda, and ground cinnamon. Gently fold the flour mixture into the honey mixture using a large metal spoon until just combined. Transfer mixture into a greased loaf pan and bake in a preheated oven for 45 minutes. Cover with foil and bake for an additional 15 minutes or until a skewer inserted into the center comes out clean. Let the bread sit in the pan for 10 minutes before moving it to a cutting board.
  • Make the honey almond syrup by heating honey, lemon juice, and almonds in a saucepan over medium heat until boiling. Stir constantly and cook for 1 minute.
  • Slice the warm bread and arrange on plates. Drizzle with the indulgent honey almond syrup and serve promptly with a dollop of velvety thick cream.
