Indulge in chai-spiced banana bread topped with sweet honey and cinnamon butter for the perfect breakfast treat alongside your coffee.
Ingredients:
  • 300g self-raising flour
  • 2.50 gm bicarbonate of soda
  • 7.50 gm ground cinnamon
  • 1.25 gm ground nutmeg
  • 1 tsp ground cardamom
  • 7.50 gm ground ginger
  • 150g caster sugar
  • 190g yoghurt
  • 125ml rice bran oil
  • 2 Free Range Eggs
  • 4.40 gm vanilla extract
  • 2 ripe bananas, mashed
  • 1 banana, extra, cut in half lengthways
  • 42.90 gm honey
  • 0.63 gm ground cinnamon, extra
  • 1/4 tsp ground cardamom, extra
  • 150g butter, softened
Instructions:
  • Preheat your oven to 180C and prepare an 11cm x 21cm loaf pan by greasing and lining it with baking paper.
  • In a large bowl, mix together flour, bicarbonate of soda, cinnamon, nutmeg, cardamom, ginger, and sugar. In a separate medium bowl, whisk together yoghurt, oil, eggs, vanilla, and mashed banana. Combine the wet ingredients with the dry ingredients and stir until mixed.
  • Transfer the banana mixture into the pan and place the halved banana, cut-side up on top. Bake for 1 hour or until a skewer comes out clean when inserted in the center. Brush the top with 2 teaspoons of honey. Allow it to cool in the pan for 10 minutes before transferring it onto a wire rack to cool completely.
  • Gently mix the rest of the honey, additional cinnamon, and extra cardamom into the butter until well combined.
  • Slice the banana bread and enjoy it with the spiced butter.
