Delicious gluten-free almond flour banana bread sweetened with ripe bananas and honey, no added sugar.
Ingredients:
  • 3 large eggs, beaten
  • 1 tablespoon apple cider vinegar
  • 3 medium ripe bananas, mashed
  • 0.25 cup coconut oil, melted
  • 0.25 cup honey
  • 1 teaspoon vanilla extract
  • 3 cups almond flour
  • 0.75 teaspoon baking powder
  • 0.5 teaspoon ground nutmeg
Instructions:
  • Prepare all the necessary ingredients.
  • Preheat the oven to a toasty 300°F (150°C) and give a gentle mist to a 9x5-inch loaf pan with cooking spray.
  • In a bowl, vigorously whisk together eggs and vinegar. Add bananas, coconut oil, honey, and vanilla. Mix until smooth and well combined.
  • Combine almond flour, cinnamon, baking powder, nutmeg, and salt in a large bowl, sifting to ensure even distribution.
  • Blend the dry ingredients into the wet ingredients until fully incorporated.
  • Transfer the mixture into the greased loaf pan.
  • Bake in the preheated oven for about 1 hour, or until a knife inserted into the center comes out clean. If it browns too much, cover with foil. Let it cool in the pan for 10 minutes, then transfer the loaf to a wire rack to cool completely.
