Festive holiday cake enriched with bananas and eggnog for extra richness and moisture.
Ingredients:
  • 3 cups all-purpose flour
  • 1.5 teaspoons baking soda
  • 0.25 teaspoon salt
  • 0.75 cup margarine
  • 2.25 cups white sugar
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 1.5 cups eggnog
  • 1.5 cups mashed bananas
  • 0.5 cup butter, softened
  • 1 (8 ounce) package cream cheese, softened
  • 1 teaspoon vanilla extract
  • 3 cups confectioners' sugar
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C) and generously grease and flour a 9x13-inch baking pan.
  • In a large bowl, combine flour, baking soda, and salt. In a separate bowl, cream margarine and white sugar until light and fluffy. Add eggs one at a time, then mix in 2 teaspoons of vanilla extract. Alternate adding the butter mixture and eggnog to the flour mixture until fully combined, then gently fold in the bananas. Pour batter into prepared pan.
  • Bake in the preheated oven for 1 hour until a toothpick comes out clean from the center of the cake. Then cool on a wire rack for 1 hour.
  • In a bowl, cream together butter and cream cheese until smooth. Mix in 1 teaspoon of vanilla extract. Gradually add confectioners' sugar and beat with an electric hand mixer until well combined. Spread the delicious frosting onto the cooled cake.
