Protein-packed banana oatmeal breakfast cookies with a hint of spice for a tasty and convenient morning treat!
Ingredients:
  • 1 cup packed brown sugar
  • 1 cup mashed ripe banana, divided
  • 1 scoop cake-flavored 100% whey protein powder (such as Optimum Nutrition™ Gold Standard 100% Whey™)
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon ground cloves
  • 3 cups rolled oats
Instructions:
  • Preheat the oven to 350°F (175°C) and grease the cookie sheets.
  • In a large bowl, whip up a luxurious blend of brown sugar and 3/4 cup of banana using an electric mixer. Integrate the rest of the banana and fold in the fragrant vanilla extract.
  • In a separate bowl, blend together flour, protein powder, salt, cinnamon, baking soda, and cloves; then fold into the banana mixture. Incorporate rolled oats.
  • Spoon rounded tablespoonfuls of the dough onto the prepared cookie sheets, allowing space for spreading.
  • Bake in the preheated oven until edges are golden and set, for 8 to 10 minutes. Cool the cookies on the sheets for 5 minutes, then transfer to a wire rack to completely cool.
