Bananas Foster Belgian Waffles

Surprise Mom with a delicious fusion of her favorite breakfast and dessert - banana-topped French toast!
Ingredients:
  • 1.3333333730698 cups all-purpose flour
  • 0.75 teaspoon baking soda
  • 0.25 teaspoon salt
  • 3 eggs
  • 1.5 teaspoons vanilla extract
  • 1.3333333730698 cups milk
  • 0.33333334326744 cup melted butter
  • 2 teaspoons baking powder
  • 0.25 cup butter
  • 0.66666668653488 cup brown sugar
  • 2 teaspoons rum flavored extract
  • 2 teaspoons vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 0.25 cup whole pecans
  • 0.5 cup pancake syrup (i.e. Mrs. Butterworth's®)
  • 3 bananas, cut into 1/2 inch slices
  • 1 cup heavy cream
  • 0.25 teaspoon vanilla extract
  • 1 tablespoon confectioners' sugar
Instructions:
  • Heat up a Belgian waffle iron. Combine flour, baking soda, baking powder, white sugar, and salt in a bowl; mix well and set aside.
  • In a bowl, combine eggs, 1 1/2 teaspoons vanilla extract, and milk. Mix in melted butter and flour until a slightly lumpy batter forms. Cook in a preheated waffle iron until steam dissipates, approximately 2 minutes.
  • In a saucepan over medium heat, melt 1/4 cup of butter. Stir in brown sugar, rum extract, 2 teaspoons of vanilla extract, and cinnamon. Let it simmer, then add pecans and simmer for another minute. Add pancake syrup and bananas, cook until bananas soften, around 4 minutes.
  • Whip heavy cream, 1/4 teaspoon vanilla, and confectioners' sugar with an electric mixer in a medium bowl until you achieve firm peaks.
  • After the waffles are cooked, generously pour the bananas Foster sauce over them and finish with a dollop of whipped cream on top.
