Indulge in delectable Bananas Foster Pancakes with caramelized bananas and rum sauce. Ready in just 20 minutes, this sweet treat is perfect for breakfast or dessert, guaranteed to please the whole family!
Ingredients:
  • 2 cups Bisquick™ Original Pancake & Baking Mix
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 2 eggs
  • 1/2 cup butter
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup maple syrup
  • 1/4 to 1/2 teaspoon rum extract, if desired
  • 4 firm ripe medium bananas, cut into 1/2-inch slices
  • 1/2 cup chopped toasted pecans or walnuts, if desired
Instructions:
  • Combine Bisquick™ mix, milk, and eggs in a medium bowl, stirring until well blended. Preheat a griddle or skillet over medium heat or to 375°F. Grease with vegetable oil if needed or spray with cooking spray before heating. Pour slightly less than 1/4 cup of batter for each pancake. Cook until bubbles form on the surface. Flip and cook until golden brown. Serve immediately or keep warm in the oven on a cookie sheet until ready to serve.
  • Combine butter, brown sugar, cinnamon, nutmeg, maple syrup, and rum extract in a 10-inch nonstick skillet. Cook over medium-high heat for 2 to 3 minutes, stirring constantly with a wooden spoon until the sugar dissolves and the mixture thickens.
  • Lower the heat to medium and delicately add the bananas, ensuring to spoon the sauce over each piece. Cook for roughly 3 minutes until the bananas have a glossy coating of sauce.
  • To present, place 2 pancakes on each plate; generously spoon 1/3 cup of bananas and sauce over the pancakes. Top with chopped nuts for an extra crunch, and serve promptly.
