Indulge in decadent Bananas Foster crepes with creamy caramel filling.
Ingredients:
  • Double cream, to serve
  • 150g plain flour
  • 1 pinch salt
  • 2 eggs
  • 310ml milk
  • 15g butter, melted
  • 50g unsalted butter
  • 70g brown sugar
  • 8 small bananas, peeled and thickly sliced diagonally
  • 125ml thickened cream
Instructions:
  • In a large mixing bowl, combine 1 cup (150g) sifted plain flour with a pinch of salt. Create a well in the center and whisk together 2 eggs, 1 1/4 cups (310ml) milk, and 15g melted butter until smooth.
  • Gradually blend the milk mixture into the flour while whisking until a smooth, well-combined batter forms. Cover and refrigerate for 30 minutes.
  • Preheat a 7-8 inch crepe pan or small frying pan over medium heat and lightly coat with butter. Pour 1/4 cup (60ml) of crepe batter into the pan, swirl to cover the base, and cook until golden and lacy, about 2 minutes. Flip and cook for an additional 30 seconds. Transfer to a plate and continue with the rest of the batter in the same way.
  • In a skillet over medium heat, melt 50g of unsalted butter with 1/3 cup (70g) of brown sugar until caramelized. Add 8 small bananas, peeled and thickly sliced diagonally, and cook for 5 minutes, turning once, until golden. Transfer to a plate.
  • Pour in 1/2 cup (125ml) thickened cream, stirring continuously until fully incorporated. Bring to a boil and simmer for 2 minutes until slightly thickened.
  • Fill the crepes with sliced bananas, roll them up, drizzle with caramel sauce, and serve with double cream.
