Indulge in gluten-free pancakes with caramelized bananas for a delicious morning treat.
Ingredients:
  • 110g (3/4 cup) quinoa flour
  • 115g (2/3 cup) potato starch
  • 6.00 gm gluten free baking powder
  • 40.00 gm caster sugar
  • 2 eggs
  • 150ml milk
  • 4.40 gm vanilla essence
  • Melted butter, to grease
  • Thick Greek yoghurt, to serve
  • 55g (1/4 cup) firmly packed brown sugar
  • 2.20 gm vanilla extract
  • 2 large bananas, thickly sliced
Instructions:
  • In a large bowl, sift together quinoa flour, potato starch, and baking powder. Stir in the sugar. Create a well in the center and add the eggs, milk, and vanilla essence. Whisk until smooth, and the batter will be thin.
  • 1. Preheat a non-stick pan over medium heat and lightly brush it with butter. Pour 60ml (¼ cup) of batter for each pancake and cook for approximately 2 minutes until bubbles form. Flip and cook for another minute until done. Keep warm on a plate as you make the remaining pancakes.
  • Heat a large non-stick frying pan over medium-high heat. Add sugar, vanilla, and 2 tablespoons water. Cook and stir until sugar dissolves. Add banana slices and cook for 1-2 minutes, making sure they are coated in the caramel sauce.
  • Top the pancakes with a generous spoonful of yogurt and the caramelized bananas before serving.
