Irresistible protein-packed quinoa pancakes topped with blueberries for an energizing breakfast that will keep you satisfied all day. Balance your diet deliciously with Bisquick protein pancakes for weekdays and weekends.
Ingredients:
  • 1/2 cup old-fashioned oats
  • 2/3 cup fat-free (skim) milk
  • 1 1/2 cups vanilla fat-free Greek yogurt
  • 2 eggs
  • 2 cups Bisquick Heart Smart™ mix
  • 1/2 cup chopped walnuts
  • 1/4 cup ground flaxseed or flaxseed meal
  • 1/2 cup cooked quinoa
  • 1 teaspoon baking soda
  • 1 cup wild blueberries (thawed, if frozen)
  • Real maple syrup
  • Additional vanilla fat-free Greek yogurt
  • Additional wild blueberries (thawed, if frozen)
  • Additional chopped walnuts
Instructions:
  • Combine oats and milk in a large bowl, stirring well. Allow to stand for 5 minutes.
  • Stir yogurt and eggs into oatmeal mixture until well combined. Add remaining pancake ingredients, excluding blueberries, and mix until blended. The batter will be thick.
  • Preheat a nonstick griddle to 350°F or a skillet over medium heat. Pour 1/4 cup of batter onto the griddle for each pancake, spreading it to form a 4-inch diameter. Sprinkle 1 tablespoon of blueberries over each pancake. Cook for approximately 2 minutes on each side, or until golden brown and fully cooked.
  • Garnish with your favorite toppings before serving.
