High protein pancakes recipe

Whip up easy, protein-packed pancakes with pantry staples. Blend, fry, and top with your favorite fruits, nuts, and seeds!
Ingredients:
  • 90g (1 cup) rolled oats
  • 1 large banana
  • 20.00 ml chia seeds
  • 4.00 gm baking powder
  • 130g (1/2 cup) natural yoghurt, plus 130g (1/2 cup), extra
  • 4 eggs
  • 4.40 gm vanilla extract
  • 195g (1 1/3 cups) frozen berries
Instructions:
  • In a blender, mix together oats, banana, chia seeds, baking powder, yogurt, eggs, and vanilla until smooth.
  • Prepare the non-stick pan by spraying it with oil and heating it over medium heat. Spoon slightly heaped tablespoonfuls of the mixture onto the pan, cooking each side for 2 minutes until golden and fully cooked. Spray a little more oil between batches (remove pan from heat before spraying) and repeat until you have made 12 pancakes. Serve topped with berries and extra yogurt.
