Make impressive bananas foster at home with buttery caramel, flambé, and a big scoop of ice cream. Surprisingly easy!
Ingredients:
  • 1/2 cup unsalted butter
  • 3/4 cup (150g) light brown sugar, tightly packed
  • 1/4 cup (50g) granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 3 medium ripe bananas
  • 1/3 cup (about 3 ounces) dark rum
  • Vanilla ice cream, for serving
Instructions:
  • Combine butter, brown sugar, granulated sugar, and cinnamon in a medium skillet over medium heat. Stir occasionally with a wooden spoon until butter is melted and sugars are dissolved, approximately 3 minutes.
  • Prepare the bananas by peeling them and slicing each one in half lengthwise, then cutting them into approximately 2-inch chunks. Be careful not to make the pieces too small to prevent them from becoming mushy while cooking.
  • Sauté sliced bananas in sugary butter in a skillet for about 2 minutes until they slightly soften, stirring gently to coat evenly.
  • Flambé the bananas: Turn off the burner and carefully pour in the rum, using a long stick lighter to ignite the skillet. Let the blue flames grow and die down naturally for 30 to 60 seconds. Allow the flames to work their way around the pan to burn off the alcohol as the caramel bubbles and foams. Once the flames extinguish, return the skillet to medium heat. Cook for about 1 minute, stirring occasionally, then remove from heat. Avoid spilling any rum on the stovetop.
  • Serve up a delightful treat by placing a scoop of ice cream in a bowl, topping it with bananas, drizzling with sauce, and savoring every bite of the delicious Bananas Foster. For any leftovers, store in a covered container in the refrigerator for 3 to 4 days. Reheat gently on the stovetop before enjoying again.
