Transform yellow cake mix into decadent Bananas Foster cupcakes with caramel filling and rum-buttercream frosting.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1 1/4 cups water
  • 1/3 cup vegetable oil
  • 3 eggs
  • 1 cup mashed very ripe bananas (2 medium)
  • 1/2 teaspoon rum extract
  • 3/4 cup dulce de leche (from 13.4-oz can)
  • 1 cup butter, softened
  • 3 1/2 cups powdered sugar
  • 2 to 3 tablespoons milk
  • 3/4 teaspoon rum extract
  • Yellow food coloring, if desired
Instructions:
  • Preheat oven to 350°F and line 30 regular-size muffin cups with paper baking cups.
  • Prepare delicious Banana Rum Cupcakes by combining cake mix, water, oil, and eggs in a large bowl. Mix on low speed for 1 minute. Then, add bananas and rum extract and beat on medium speed for about 30 seconds until well combined. Fill muffin cups 3/4 full with the batter.
  • Bake the cupcakes for 18 to 23 minutes until a toothpick inserted in the center comes out clean. Let them cool in the pans for 10 minutes, then transfer to a cooling rack. Once they are completely cooled after about 30 minutes, you can fill and frost them.
  • Hollow out the center of each cooled cupcake by cutting out a 3/4 inch diameter cone shape about 3/4 inch deep using a sharp paring knife. Trim off the pointed end of each cone and set aside the tops. Fill each cavity with approximately 1 teaspoon of dulce de leche and cover with the reserved tops, pressing lightly to secure.
  • In a large bowl, use an electric mixer to beat butter until light and fluffy. Gradually add powdered sugar, beating on low for 30 seconds and then on medium for 1 minute until well mixed. Stir in 2 tablespoons milk and 3/4 teaspoon rum extract until fluffy. Gradually mix in food coloring until desired color is reached. If needed, add the remaining 1 tablespoon of milk, 1 teaspoon at a time, until the frosting reaches your desired consistency.
  • Load your preferred frosting into a decorating bag with your chosen tip. Pipe frosting onto the cupcakes. Serve right away or chill until ready to enjoy. Keep stored in the refrigerator.
