Prep quickly for delectable banoffee hot cross buns.
Ingredients:
  • 40g butter
  • 8.00 gm brown sugar
  • 2 small bananas, sliced diagonally
  • 2 pkts by Laurent Traditional Brioche or Sourdough Hot Cross Buns, split
  • 125ml caramel sauce
  • 300ml thickened cream, whipped
  • Icing sugar, to serve
Instructions:
  • In a large frying pan over medium-high heat, melt half of the butter. Stir in the sugar until combined. Cook the banana for 2 minutes on each side until caramelized. Transfer to a plate and allow to cool.
  • Spread the buns with the remaining butter and cook them, cut-side down, in a clean frying pan over medium heat until golden, about 2 minutes.
  • Arrange the bun bases on serving plates, then generously drizzle with half of the luscious caramel sauce before crowning them with slices of ripe banana.
  • In a bowl, combine the whipped cream with the remaining caramel sauce and swirl gently to create a marbled effect. Spoon the mixture over the bananas on the bun bases, add the bun tops, dust with icing sugar, and serve promptly.
