Barbecue Chicken and Bean Casserole

Elevate classic pork and beans with tender chicken, vibrant green beans, and sweet carrots!
Ingredients:
  • 1 lb boneless skinless chicken thighs
  • 1 can (16 oz) baked beans
  • 1 can (15 to 19 oz) Progresso™ cannellini beans, rinsed, drained
  • 1/4 cup barbecue sauce
  • 1 bag (12 oz) frozen cut green beans, thawed, drained
  • 1 cup coarsely chopped carrots (about 2 medium)
  • 1 can (1.75 oz) shoestring potatoes (1 cup)
Instructions:
  • Preheat oven to 375°F and generously coat a 2-quart casserole dish with cooking spray. Divide each chicken thigh into 4 pieces and combine with all other ingredients in the casserole dish, excluding the shoestring potatoes.
  • Bake covered for 1 hour, giving it a stir halfway through. Uncover, stir well, and bake for an additional 25-30 minutes. Top with shoestring potatoes for the last 10 minutes until chicken is cooked through.
