BBQ Christmas Turkey Breast with Cranberry Sauce: a festive favorite!
Ingredients:
  • Zest of 1 lemon
  • 65.63 gm lemon juice
  • 56.88 gm light olive oil
  • 40.00 gm water
  • 2 garlic cloves, crushed
  • 20.00 ml rosemary, finely chopped, plus extra sprigs, to serve
  • 1.20 gm sea salt flakes
  • 1/2 tsp cracked black peppercorns
  • 8 (about 125g each) fresh turkey breast fillets
  • 275g Brand cranberry sauce
  • 2 oranges, peeled, white pith removed
  • Coles Brand Australian extra virgin olive oil spray
  • 30g pistachio kernels, toasted, chopped
Instructions:
  • In a glass bowl or sealable plastic bag, mix together lemon zest, lemon juice, oil, water, garlic, rosemary, salt, and pepper. Add turkey and coat it well. Cover and refrigerate for 30 minutes.
  • Prepare the oranges by cutting each side of the membrane over a bowl to release the segments, then squeeze the remaining juice into the bowl. Combine cranberry sauce and orange juice in a saucepan over low heat for 3 minutes. Add the reserved segments and warm for an additional minute.
  • Preheat barbecue grill or chargrill pan to medium heat, then lightly spray with oil. Cook marinated turkey on the grill for 4 minutes on each side or until fully cooked. Remove from the grill and let it rest, covered with foil, for 10 minutes before slicing thickly.
  • Place the turkey on a platter garnished with fragrant rosemary sprigs, then generously sprinkle with crunchy pistachios before serving with the delectable sauce.
