BBQ turkey breast buffet with fresh peach relish

Grilled turkey slices with refreshing peach relish.
Ingredients:
  • 3kg turkey buffe
  • 50g butter, melted
  • 36.40 gm olive oil
  • 1 tsp red chilli, chopped
  • 20.00 ml white wine vinegar
  • 2.50 gm caster sugar
  • 4 ripe peaches
  • 2 spring onions
Instructions:
  • Preheat your covered barbecue to 180C by lighting the two outside burners (or one side burner if you have 2 burners) and leaving the centre burner unlit.
  • Take the turkey out of the packaging, wash it inside and out, and pat it dry with paper towels. Put it breast side up in a baking dish, and delicately brush the entire turkey with half of the butter and oil mixture. Cover with a sheet of non-stick baking paper followed by a sheet of foil.
  • Place the dish over the unlit burner and close the barbecue lid. Cook for 1 hour. Uncover, brush with remaining butter and oil, then bake for another hour. Rest for 15 minutes. Cut the breast meat from the bone and slice thickly to serve.
  • For the Peach Relish: Score a small cross at the base of each peach, then soak them in boiling water in a large bowl. After 2 minutes, remove the peaches, let them cool, and peel off the skins. Dice the flesh and mix with onions, chili, vinegar, and sugar. Serve this flavorful relish with turkey and your favorite sides.
