Barbecued asparagus with hazelnuts and mint

Elevate your BBQ with a stylish asparagus side dish - fancy without the hassle!
Ingredients:
  • 4 bunches asparagus, woody ends trimmed
  • Olive oil spray
  • 75g (1/2 cup) dry-roasted hazelnuts, coarsely chopped
  • 82.50 ml fresh mint leaves
  • 40.00 ml pomegranate juice
Instructions:
  • Prepare the barbecue grill or chargrill on medium heat. Skewer a bunch of asparagus by threading a soaked bamboo skewer through the bottom end of each spear, about 3cm from the base, and another skewer through the top of each spear. Repeat this process for the remaining 3 bunches of asparagus.
  • Coat asparagus generously with oil and grill for 1 minute per side until vibrant green, perfectly crisp, and lightly charred. Let it cool briefly before removing from skewers and arranging on a platter for serving.
  • In a small bowl, combine pomegranate juice and oil. Season with salt and pepper. Pour the flavorful dressing over the asparagus and top with hazelnuts and fresh mint.
