Barbecued asparagus with pistachio and lemon dressing

Grilled asparagus with zesty lemon and crunchy pistachios, a perfect Spring side dish.
Ingredients:
  • 800g asparagus
  • 40.00 ml pistachio kernels, chopped
  • 56.88 gm olive oil
  • 11.80 gm dijon mustard
Instructions:
  • Prepare a zesty lemon dressing by mixing together oil, 2 tablespoons of lemon juice, and mustard in a small jug. Cover it and let it sit for later use.
  • Heat up your barbecue plate or chargrill until it's nice and hot. Grill the asparagus, flipping occasionally, for about 4 minutes or until it's almost tender. Transfer to a plate.
  • Drizzle asparagus with dressing and sprinkle with pistachios before serving.
