Barbecued asparagus with lemon, feta and mint

Tasty asparagus side dish perfect for any BBQ.
Ingredients:
  • 25g (1/4 cup) flaked almonds, toasted
  • 1 lemon
  • 36.40 gm extra virgin olive oil
  • 4 bunches asparagus, woody ends trimmed
  • 100g marinated feta, crumbled
  • 125.00 ml small mint leaves
Instructions:
  • Preheat your barbecue or chargrill over medium heat. Zest the lemon, using a zester for fine pieces, or alternatively, peel the lemon with a vegetable peeler and thinly slice it after removing the white pith. Juice the lemon.
  • In a small jug, vigorously whisk together the lemon juice and 1 1/2 tablespoons of oil until emulsified. Season generously with salt and pepper.
  • Drizzle the rest of the oil over the asparagus and grill, turning occasionally, for 3 minutes until vibrant green, tender-crisp, and slightly charred. Transfer to a platter, then drizzle with lemon dressing and top with lemon zest, feta, mint, and almonds. Serve right away.
