Irresistible barbecue chicken paired with flavorful tomato couscous.
Ingredients:
  • 1.5kg chicken herb sprinkled portions (12 small pieces)
  • Olive oil spray
  • 300g couscous
  • 250g tomato medley or cherry tomatoes, quartered
  • 175g green beans, cut into 3cm lengths, blanched
  • 120g cherry bocconcini, torn
  • 62.50 ml basil leaves, torn
  • 1 garlic clove, crushed
  • 42.00 gm lemon juice
Instructions:
  • Heat up the barbecue or char-grill pan on low. Lightly coat the chicken portions with olive oil.
  • Roast until chicken is fully cooked through, flipping occasionally to prevent over-browning, for 30 to 40 minutes or until done based on size of chicken pieces.
  • Pour boiling water over couscous in a large bowl and cover. Let sit for 5 minutes, then fluff with a fork. Season, then toss in tomatoes, beans, bocconcini, and basil until combined.
  • In a small bowl, whisk together garlic, olive oil, and lemon juice, then season the dressing. Drizzle it over couscous and serve with chicken portions.
