Herb-infused, zesty side dish complements any barbecue dish with a burst of flavor.
Ingredients:
  • 400g (2 cups) white long-grain rice
  • 1.125L (4 1/2 cups) chicken style liquid stock
  • 44.40 gm tomato paste
  • 1 tsp dried oregano leaves
  • 4 large tomatoes, peeled, seeded, coarsely chopped
  • 4 shallots, trimmed, thinly sliced
  • 82.50 ml chopped fresh continental parsley
  • 18.20 gm extra virgin olive oil
Instructions:
  • In a large saucepan over medium-high heat, mix together the rice, stock, tomato paste, and oregano. Simmer until tender, about 12 minutes. Allow it to cool in a large bowl.
  • Combine the tomato, shallot, parsley, and oil in a tantalizing mix. Add a sprinkle of salt and pepper to enhance the flavors.
