Tender, slow-cooked maple mustard BBQ lamb.
Ingredients:
  • 80ml maple syrup
  • 1 tsp mustard powder
  • 48.80 gm Worcestershire sauce
  • 4 garlic cloves, crushed
  • 2kg Lamb Shoulder Roast
  • 120g Brand Australian Superfood Leaf Blend
  • 80ml balsamic dressing
  • 4 Rustic Rolls, to serve
  • Lemon wedges, to serve
Instructions:
  • Preheat a covered barbecue on medium heat or preheat oven to 200C.
  • In a medium jug, mix maple syrup, mustard powder, Worcestershire sauce, and garlic. Rub three-quarters of the sauce mixture all over the lamb and place it in a disposable baking tray. Add 1/2 cup (125ml) water to the remaining sauce, pour it into the tray and season the lamb. Cover tightly with foil and roast in a covered barbecue with indirect heat or in the oven for 2 hours until tender, adding more water if needed.
  • Uncover the lamb and continue cooking for an additional 15 minutes until nicely browned. Take the lamb off the barbecue and carefully cover it with foil. Allow it to rest for 20 minutes before serving.
  • Drizzle salad with balsamic dressing. Serve lamb alongside salad, bread rolls, and lemon wedges.
