Elevate your fried rice with smoky barbecued prawns, bacon, and garlic for a restaurant-quality flavor!
Ingredients:
  • 1/2 brown onion, diced
  • 2 garlic cloves, very finely chopped
  • 2cm piece fresh ginger, peeled, very finely chopped
  • 100g middle bacon rashers, trimmed, chopped
  • 150g small green prawns, peeled, deveined
  • 600.00 gm cold cooked long-grain white rice (see note)
  • 3 green onions, sliced, plus extra to serve
  • 24.40 gm oyster sauce
  • 10.60 gm soy sauce
  • 20.00 ml shao hsing (Chinese cooking wine)
  • 2.25 gm white sugar
  • 1/2 tsp sesame oil
Instructions:
  • Prepare a flavorful sauce by mixing oyster sauce, soy sauce, shao hsing, sugar, sesame oil, and 2 tablespoons of water in a small bowl. Keep it aside for later use.
  • Heat vegetable oil on a sizzling hot barbecue hotplate or large frying pan. Throw in brown onion, garlic, and ginger. Stir-fry for 1 minute. Add bacon and continue stirring for another minute. Toss in the prawns and cook for 1 minute until they are perfectly done.
  • Place the rice in the pan. Cook, stirring continuously for 1 minute to infuse a delicious smoky flavor into the rice. Add green onion and sauce, then mix well to coat the rice. Plate the dish and garnish with extra green onion before serving.
