Barbecued prawns with honey and ginger mayonnaise

Tantalizing prawns with zesty honey ginger mayo.
Ingredients:
  • 5cm-piece lemon grass, pale-section only, finely chopped
  • 3 makrut lime leaves, finely shredded
  • 31.50 gm fresh lime juice
  • 12.20 gm fish sauce
  • 5.00 gm caster sugar
  • 24 (about 650g) green king prawns, peeled leaving tails intact
  • 190g (2/4 cup) Whole Egg Mayonnaise
  • 14.40 gm honey
  • 5cm-piece ginger, peeled, finely grated
  • 40.00 ml finely chopped fresh coriander
Instructions:
  • Combine oil, lemongrass, makrut lime leaves, lime juice, fish sauce, and sugar in a small bowl. Pour this aromatic mixture over the prawns in a glass or ceramic dish. Cover with plastic wrap and chill in the fridge for 30 minutes to enhance the flavors.
  • Prepare the honey & ginger mayonnaise by mixing together the mayonnaise, honey, ginger, and coriander in a bowl. Cover with plastic wrap and refrigerate until serving.
  • Preheat a barbecue or chargrill pan on high heat. Remove the prawns from the marinade. Grill prawns, turning occasionally, for about 3 minutes until they curl and change color. Place on a serving platter and serve with honey & ginger mayonnaise right away.
