Barbecued prawns with spicy corn relish

Grill prawns with quick spicy corn relish on barbecue for a delicious dish ready in minutes!
Ingredients:
  • 27.30 gm olive oil, divided
  • 1 shallot, finely chopped (about 2 tbs)
  • 1 long red chilli, finely chopped
  • 2 garlic cloves, finely chopped
  • 165g corn cob
  • 2 spring onions, thinly sliced
  • 2 tsp fresh flat-leaf parsley, chopped
  • 1/2 lemon
  • 16 raw banana prawns (about 350g), peeled and deveined, tails on
  • 2.50 gm smoked paprika
  • 1/4 tsp garlic granules
  • Lemon wedges, to serve
Instructions:
  • Preheat the barbecue to high heat.
  • Preheat a medium heavy frying pan on the barbecue until hot. Add oil, shallot, chili, and garlic to the pan. Cook and stir for 1 min until shallot is translucent. Add corn kernels and cook for 4 mins until tender and charred. Transfer to a bowl and stir in spring onions, parsley, lemon juice, and salt to taste. Set aside the delicious corn relish.
  • In a separate bowl, combine prawns with remaining ½ tbs oil, paprika, garlic granules, sea salt, and black pepper. Grill prawns for 2 mins on each side until cooked and slightly charred. Place prawns on a platter, top with corn relish, and serve with lemon wedges.
