Barbecued split prawns

Delicious and vibrant barbecue prawns, grilled to perfection.
Ingredients:
  • 1kg raw banana prawns
  • 74.25 gm white sugar
  • 82.50 ml white vinegar
  • 6.10 gm fish sauce
  • 65.63 gm lime juice
  • 1 red chilli, finely chopped
Instructions:
  • Prepare the prawns by cutting off the heads using a small knife and trimming the legs with kitchen scissors. Make a lengthwise split (not all the way through) using a small, sharp knife and remove the intestinal tract. Place the prawn shell side up on a flat surface and press it flat gently with your fingers.
  • In a small saucepan, cook sugar and vinegar until syrupy for 5-7 mins. Add chili and continue to cook for 3 more mins. Remove from heat and stir in fish sauce and lime juice.
  • 1. Preheat the barbecue flat plate on high heat. Cook the prawns flesh side down for 2 minutes, then flip and cook for an additional 1 minute. Serve on a platter and generously drizzle with sauce.
